If you want to split your excerpt into different paragraphs or need to use heading tags or any other HTML tags you have to use manual excerpt field from admin panel post edit screen.

If you are not seeing excerpt field at post edit screen click ‘Screen Options’ (top right corner) then check Excerpt. You will get the excerpt field.
